This pan is large, but great.
I followed the instructions for seasoning and the pan was ready for use. These pans heat up quickly and just fun to cook with. I have three different sizes and would not part with any of them. This pan is large and nice for when you want to make lots of potatoes, veggies, etc... Katom's service is great, the package arrived when they said it would.
Simple and good for serving right on the table
I did buy it again. My friends keep taking them. I bought several Vollraths and this and two Spring USA. The Spring USA is certainly a heavier, more expensive to make pan. These are simple. They work. No rivets. You can turn the flame up and down and hear the sizzle/no sizzle with only a few second lag. I also decided to use them as serving pans - so I bought more - smaller ones. They have a classic look by themselves that I see no point in transfering hot stuff to a serving plate. I did that and got a few comments by those I was serving how cool they looked. Me - just an enthusiast cook.
Be careful
First thing I did was pick up the pan and cut my hand on the handle. Near the outer end is a curved part on each side. The edges were like razors. Quality control really sucks when they let this unfinished handle get past them. I was going to ask for a refund, but instead, just decided not to buy anything else from Vollrath.
Great pan
After a good seasoning this pan is working out really well. I find that carbon steel doesn't quite form as good of a "non-stick" surface as cast iron does, at least not as quickly. But after only a few uses the pan is performing very well. The handle is very long and the lip of the pan is tall, making it good for flicking/flipping the contents. It's thinner and lighter than other carbon steel pans, halfway between that and a wok. This means it heats up much faster and also cools down quicker. If you apply a small directed heat source the pan will temporarily warp - good even heat prevents this. Once it cools down it returns to its original shape. My electric burner at home concentrates heat a lot in the centre so it can become concave and doesn't sit perfectly flat. But over a flame burner on my BBQ or in the oven it stays perfectly flat. Love the pan, a fantastic deal at this price.
I would buy this product again.
I bought this for my son in law for Christmas who is a fabulous cook. He carefully seasoned it, and got it blackened the way he wanted it. He tells me all the time how much he loves his pan, and is his favorite Christmas gift!
Unsafe. Disappointing.
I carefully followed the instructions on the vollrath website about how to season this pan. I was very excited about this purchase. The first time on the heat, one hot spot turned so dark the metal changed color as if it was going to melt. I do not think this pan is safe. Due to Katom's "return policy" this pan is going into the trash. Disappointing to say the least. This is the first time I have ever reviewed anything online. Yes, it was that bad.

Heats oil rapidly, even heat, good balance and weight. Flips nicely.
