Pitco 65C+S Description
With an oil capacity of 65 to 80 pounds and an 18-inch by 18-inch frying area, the Pitco 65C+S gas fryer is perfect for high-volume frying. A tube rack holds the fry baskets in place and enables crumbs and debris to sink to the cold zone, where they will not burn and affect the oil's taste. The operator can select the temperature through millivolt controls to ensure frying is accurate and consistent.
To provide efficient heat to the oil, heat exchanger tubes are mounted in the fry tank with long-lasting, high-temperature heat baffles made of alloy stainless steel. A standing pilot light ensures the unit can provide a flame whenever you need it, but the gas control valve immediately halts gas from flowing if the pilot flame goes out. Due to the high-temperature limit, the gas will also be shut off automatically if the fryer exceeds temperatures of 450 degrees Fahrenheit. This fryer has an integrated flue deflector that directs heat to the hood vent to help keep the kitchen at a comfortable temperature.
The stainless steel tank on this Pitco 65C+S gas fryer is peened, providing a smooth finish that supports quick cleaning. Peening the tank also prevents gaps from forming when the surface is welded. The unit comes with twin fry baskets that can be placed on the hanger as oil drains from the cooked food. A 11⁄4-inch front-located drain valve, accessible through the cabinet door, ensures draining is straightforward. The included drain extension helps operators guide the used oil into an appropriate container or filter system, and the clean-out rod removes sediment.

"Got the Fryer in and it would have fire out the top of the flu. Got that fixed for it to only last just over a year. Cracks down the pot and the welds are coming apart. It's not even 18 months of use and it's out of warranty. I'm a pitco fan but I'll move over to a Dean with a 5 year warranty."

"I bought this and an 45# Pitco fryer at the same time, about a month ago, for my bar. I use the 80# fryer for all fried bar food except wings (45#). It works great, cooks great, pilot is blue, but the flame is blue & yellow (reason for 4 stars, would be 5 if I can get all blue like my 45#)...I've adjusted the burner as much as possible to get the blue flame, but if I go any lower there's not enough flame to recover quickly. I'm keeping my eye on the burner flame as my previous 70# fryer was all yellow flame and caused massive soot build up causing flames to shoot out the front and up the flue. This was a mess, so I'm hoping don't see soot build up over time. This is so easy to clean. I have a hot water hose that I use to rinse excess debris, then I soak the pot with dawn and hot water (approx 220F) for about 15 mins,. I've used boil out on previous fryers but hate the chemicals & fumes, plus it pitted the tank. So in talking with a 25yr chef, he said he had same problem with boil out and to use the dawn and hot water for best results without heavy chemicals. I'm sticking with the dawn method. The basket and the grate are also very easy to clean, everything comes right off. I would recommend this product."
