Pitco 40S Description
This Pitco 40S Frialator gas fryer can hold 40 to 45 pounds of oil, so it can cook 72 pounds of fries per hour. Since the welded tank is pressure blasted, it has a peened finish that is smooth and easy to clean; peening a tank also eliminates scorch marks and creates strength at pressure points. The deep cold zone in the tank contains at least 20 percent of the tank's total oil and prevents sediment from burning in the cooking area, which enables this fryer to handle heavily breaded items like mozzarella sticks and chicken tenders.
This commercial fryer maintains selected temperatures between 200 and 400 degrees Fahrenheit and has a high-temperature limit that shuts off gas flow if the unit exceeds 450 degrees. The standing pilot light provides an on-demand flame, and the gas flow will shut off if the pilot flame goes out. To help maintain a comfortable temperature in the kitchen, a built-in heat deflector directs the heat to the hood vent. In the front, a drain enables operators to remove oil and sediment directly or connect the drain extender to tubing if the oil needs to go into a container or filter. The Pitco 40S fryer comes with two nickel-plated fry baskets and is elevated off the floor on 6-inch legs.

Cooks great!
I bought this and an 80# Pitco fryer at the same time, about a month ago, for my bar. I use the 45# fryer specifically for wings. It works great, cooks great, pilot/flame is blue and beautiful! My only complaint is the cold zone...the wing debris sticks to the bottom of the zone. I have to scrape diligently and luckily I have a hot water hose that with some minutes will loosen much of the debris, then I soak the pot with dawn and hot water (approx 220F) for about 15 mins, then I can get it off (the 80# is used for all other fried "bar food" and doesn't have this issue at all). I've used boil out on previous fryers but hate the chemicals & fumes, plus it pitted the tank. So in talking with a 25yr chef, he said he had same problem with boil out and to use the dawn and hot water for best results without heavy chemicals. The basket and the grate do also collect the wing debris quite a bit, but they are very easy to clean, everything comes right off. The wings do stick to the basket if not shaken well doing first few minutes, but not typically a concern. I would recommend this product.
