The Groen DH-40C tilting kettle has a 40-gallon capacity that is perfect for high-volume batch cooking. Using steam to cook takes less effort and provides more even heat distribution than a stock pot range. Between the interior and exterior, a hollow jacket holds charged, pure water that turns into steam when heated. Surrounding the lower two-thirds of the kettle, this jacket provides a less even heat than full-jacketed models, but it requires less water and power to operate. The kettle's interior liner is made of 316 stainless steel—a material that is highly resitant to corrosion for cooking with acidic product.

Because the Groen DH-40C steam kettle tilts, users can safely empty cooked product into another container. It tilts manually with a hand crank that is designed to move smoothly and lock into place. Because it is reinforced, the kettle rim prevents denting that could affect the steam pressure, and on the rim, a butterfly-shaped pour spout directs the contents without dripping or spilling. The controls for this unit are housed in a water-resistant enclosure and offer straightforward operation. Through a control knob with levels from 1 to 10, the temperature can be adjusted from 150 to 295 degrees Fahrenheit. A faucet bracket is included so that operators can mount a single-pantry or double-pantry faucet for a constant water supply.
