not bad for the price
It was a bit of a stretch for me to buy this, as most of my knives are Nenox, Korin Private Label & Misono - so as you can see this knife is in some pretty high quality company. Having said that for the limited use - mostly quick chopping it holds up well - IF you take care of the edge. Worth spending the money since for the price it's almost a "disposable" although I'll check bak in in a month and let how know how it's holding up .....
Decent knife at a decent price.
Dexter Russell is a supplier of knives mostly to commercial kitchens, I believe. These are generally inexpensive but offer pretty good value for their price. This one is Japanese made, high carbon stainless, and it cuts quite well for a low-cost knife. The raw wood handle has a nice feel to me, sort of primal. In Japanese tradition I believe the nakiri bocho or usuba bocho is specifically a vegetable knife but I use mine more generally than that.
