The Dexter 012-5SK 06211 beef skinning knife easily cuts skin away from the meat to prepare for the butchering process. With its high-carbon steel blade, the knife is durable and corrosion resistant. Its beech wood handle creates a traditional appearance. Brass compression rivets connect the handle to the blade; they expand and contract with the wood to maintain a secure fit. Measuring 9 1⁄4 inches long, the Dexter 012-5SK 06211 beef skinning knife has a 5-inch blade and 4 1⁄4-inch handle.

I'd buy the knife again...but return it if rusted
I really like the knife ...but none too happy about the amount of RUST it had upon arrival.

Disregard the one star comment, this knife is carbon steel like a real knife should be. As you use them they will patina. After your done using dry off. These traditional series knives with the carbon steel by Dexter Russell are great, good quality and affordable

Was really happy to find these Green River Russell Skinners were still being made. Exact same knife I've been carrying & using for almost 40 years. Not high-tech or fancy, just one of the best carbon steel dressing/ skinning knives ever made. Amazing they sell for so little. Bought one for all my buddies for Christmas, plus an extra for me.
