Winston CHV5-05UV Description

Installable on a 30-inch countertop, the Winston CHV5-05UV CVap® cook and hold oven measures 27 7⁄10 inches wide by 34 23⁄100 inches deep by 39 11⁄50 inches high. Its half-size design is stackable, enabling it to be stored on top of another unit to organize counterspace. The single compartment's interior accommodates five full-size sheet pans, 10 half-size sheet pans, or 10 hotel pans, and each rack has a 65-pound maximum load capacity, so high-volume products can be cooked in this unit. This oven's stainless steel interior and exterior resist corrosion in humid environments and dents and scratches from operators loading and unloading products. A field-reversible, insulated door offers direct access to product to minimize heat loss.

To hold foods at a safe temperature prior to serving, the Winston CHV5-05 commercial cook and hold oven uses CVAP—control vapor technology. Heated water vapor controls food temperature, and air heat alters food texture to uphold desired results. Operators manage temperature with C-Touch controls, which use thermistor to raise or lower evaporator and air temperatures in increments of 1 degree Fahrenheit. By inserting a USB into the unit's port, cooking cycles' information is downloaded into the HACCP program for users to review as needed. To streamline operation, signature dishes and menu items can be plugged into the eight programmable channels, and these can be updated with USB insertion.
