For extended high-volume holding, this Metro C599-SFC-L C5® 9 series heated holding and proofing cabinet is lined with lip-load slides that support (35) 18-inch by 26-inch sheet pans. By using natural convective airflow, heat, and humidity, this cabinet holds foods at safe serving temperatures without drying them out or affecting their flavors. Operators can adjust heat from 90 to 200 degrees Fahrenheit, while humidity can be modified to correlate with set cabinet temperatures. The top-mounted 6⁴/₅-inch touchscreen controls feature an intuitive design for simple operation and include a wide range of tasks: individual heat and humidity controls, menu presets, programmable timers, auto-start, low-water and low-temperature alarms, and HACCP data logging.

So operators can monitor holding, a clear, double-panel tempered glass door spans the Metro C599-SFC-L insulated mobile heated cabinet's front. This door grants direct access to pans for seamless insertion and removal. Unlike pass-thru units, its reach-in configuration cannot connect a kitchen and serving area, so it's fitted with 5-inch casters for transportation. Users can steer this full-height 30-inch-wide by 36³/₈-inch-deep by 74³/₄-inch-high cabinet with the built-in polymer handles, and its stainless steel construction and nonmarking polymer bumper withstand impact from collision. To avoid temperature changes during transport, this cabinet's perimeter is insulated with 2¹/₂-inch high-density fiberglass.
