To ensure food is held at safe temperatures, the Metro C585-SFC-UPFS C5™ 8 series controlled temperature holding cabinet's closed-loop monitoring system tracks the cabinet's internal environment. Operators can control temperatures with the top-mounted, solid-state controller, which provides a digital temperature display that can be checked quickly. The digitally controlled ducted heating system generates temperatures between 70 and 200 degrees Fahrenheit, and a low-temperature alarm sounds when temperatures drop. The unit's recall and memory settings can be programmed for signature menu items, and to prevent food from becoming dry when exposed to warm temperatures, an integral water pan system introduces passive humidity into the cabinet.

Universal wire slides built into the Metro C585-SFC-UPFS holding cabinet accommodate (8) 18-inch by 26-inch sheet pans or (16) 12-inch by 20-inch by 2¹/₂-inch steam table pans and can be adjusted in 1¹/₂-inch increments. The cabinet's pass-thru configuration provides access to the front and back, streamlining pan removal and loading. The clear tempered glass front door doesn't obstruct product from view, while the solid, insulated back door helps retain temperatures when it's opened for short periods of time. This half-height cabinet measures 29¹/₈ inches wide by 34⁵/₈ inches deep by 44³/₄ inches high and is mounted on 5-inch casters that enable users to move the unit.
