This Metro C535-CFS-L C5™ 3 series insulated mobile heated cabinet generates heat and humidity to hold prepared foods at safe serving temperatures for hours, preserve optimal food textures, and proof bread. Operators can adjust temperatures from 80 to 200 degrees Fahrenheit to accommodate specific holding requirements, while cabinet moisture can be modified to 95 percent humidity when the unit is set to 95 degrees Fahrenheit. Forced convection circulates air for even heating and fast recovery. Its bottom-mounted control panel includes an accurate digital thermometer, recessed control dials, a master power switch, and power indicator lights for simple operation. For cleaning and upgrades, this panel can be removed without tools.

To retain heat, save energy, and keep the exterior cool, the Metro C535-CFS-L heated holding and proofing cabinet is lined with Insulation Armour™, or high-density polyethylene insulation, and its solid, full-length door is insulated with 1-inch fiberglass to minimize temperature fluctuations. This 180-degree swing-out door grants direct access to the lip-load slides that are spaced 1.5 inches apart and support (17) 18-inch by 26-inch sheet pans. For smooth mobility between the kitchen and serving area, this 27⁵/₈-inch-wide by 31¹/₂-inch-deep by 44-inch-high unit is furnished with four 5-inch casters, two of which include brakes for stabilized product loading and retrieval. Vertical hand holds molded into the exterior improve steering control, while its polymer construction resists dents, stains, and impacts to preserve its original sleek red exterior throughout heavy use.
