As a half-size unit, this Metro C535-CFC-U C5™ 3 series insulated mobile cabinet accommodates eight 18-inch by 26-inch sheet pans or (16) 12-inch by 20-inch by 2¹/₂-inch pans, which is great for low- and medium-volume applications. By combining heat and humidity, this system holds foods at safe serving temperatures for hours without drying them out, while forced convection technology minimizes initial heating and recovery times. Operators can adjust the thermostat from 80 to 200 degrees Fahrenheit and modify humidity as high as 95 percent when the unit is set to 95 degrees Fahrenheit. The bottom-mounted control panel features a digital thermometer, recessed control dials, a power switch, and power indicator lights; when it requires cleaning or upgrades, it can be removed without tools.
