Its 27⁵/₈-inch-wide by 31¹/₂-inch-deep by 32-inch-high structure can be installed beneath a counter to save space in crowded kitchens, and it’s furnished with 3-inch casters for transportation. The aluminum cabinet interior has lip-load slides stabilized on 1¹⁄₂-inch centers and hold (10) 18-inch by 26-inch pans. Operators can see the contents through the transparent polycarbonate door, streamlining inventory checks. Its swing-out design grants full access to the cabinet for pan loading and retrieval.

With a holding temperature range between 80 and 200 degrees Fahrenheit, the Metro C533-MFS-L-GY moisture heated holding and proofing cabinet creates an optimal warming environment, and at lower temperatures, users can control moisture for proofing. Its thermostatically controlled forced convection system heats and recovers temperatures swiftly to prevent operation lags, and Insulation Armour™ high-density polyethylene retains warm temperatures while keeping the exterior cool. Recessed control dials can minimize the risk of accidental temperature adjustments, while the digital thermometer helps users accurately monitor food. All controls are bottom mounted and removable, facilitating cleaning and maintenance.
