Vulcan Charbroilers
Vulcan Charbroilers: What You Need to Know
Vulcan gas charbroilers – which may be powered by natural gas or LP – have stainless steel sides, control panels, crumb trays, and grate options in stainless steel and cast iron. The stainless steel option is more economical, lighter, and easier to clean, but less durable. Cast iron grates conduct heat better and are more resilient than stainless steel.
Common Questions about Vulcan Charbroilers
Which series of Vulcan gas charbroilers will best serve my establishment?
The three main series of Vulcan charbroilers are VACB, VCCB, and VTEC. The difference between the VACB and VCCB series is principally size, while the VTEC series is equipped with Vulcan's patented IRX technology.
Vulcan charbroilers from the VACB, or Achiever, series are 15 1/2 inches tall and 31 inches deep with cast iron burners, radiants, and grates. This series has deflector panels below the burners the reflect heat back towards the cooking zone creating better temperature uniformity. The deflector panels also keep the bottom of the charbroilers from becoming too hot so that they can be safely placed on top of a refrigerated chef base. Each 17,000 BTU burner is placed 6 inches apart.
The VCCB series offers many of the same design elements as the VACB series, such as deflector panels. However, with a height of 14 3/4 inches and a 27 1/4 inch depth, these models combine a low profile with high-volume capacity. The 14,500 BTU burners on these units are 6 inches apart.
The VTEC series of Vulcan gas charbroilers is equipped with Vulcan's patented infrared extreme, or IRX, technology. This allows the burners in the charbroiler to distribute heat evenly while simultaneously using only half the gas a radiant charbroiler uses. The 22,000 BTU burners are 12 inches apart. The VTEC series also has specially designed grates with grooves to catch fat and grease to eliminate flare-ups.
How does the smoker base work?
Smoker bases for Vulcan charbroilers are sold separately and can be field installed. These bases are made of stainless steel, with models available for VACB series and VCCB series compatibility. The smoker bases have a large grease tray with platforms for wood chips, blocks, or logs. The wood is not exposed to open flame, but sits below the charbroiler's burners to release smoke, flavoring food on the cooking surface.
