Chafer griddles provide a durable, portable cooking surface on which a myriad of dishes can be cooked. Because they work with fuel cannisters, chafing dish griddles can be set up quickly, even in rugged, rural locations such as parks and campgrounds. Although many models are made of iron, a chafing dish griddle may be made of carbon steel, stainless steel, or aluminum. Each chafing griddle type can be used to cook, warm, hold, and/or display food.

Chafing griddles come in a few configurations, providing options for many mobile and catering applications. Operators who plan to heat their griddle chafing dish over an open flame, for instance, may choose a model with legs, which creates space beneath the unit for a heat source and adds stability during high-volume cooking. For moisture-rich dishes, a chafer paella pan might be a better choice, because its curved sides help contain liquid and concentrate cooking heat inside the pan. To add attractive grill marks to meat and veggies, textured griddles are also available.
