Ventless Fryers
Ventless Deep Fryers: What You Need to Know
Unlike traditional fryers and as their name suggests, ventless fryers demand neither hoods nor vents. Hoodless fryers typically are compact, fitting on countertops and using electricity instead of gas. These features suit them for use in food trucks, concession stands, and low-volume kitchens. They are ventless and don't require hoods, so commercial ventless fryers can be installed and used basically anywhere with an electrical outlet. Common Questions About Ventless Fryers
What are the benefits of using a ventless deep fryer?
Because they are compact and designed to be installed on countertops, ventless fryers occupy less space than traditional fryers. Commercial ventless fryers require only the proper electrical outlet, simplifying installation and eliminating costly hoods. Since ventless fryers only need an electrical outlet, they can be mobile. Most ventless fryers are fully enclosed, which extends oil life because less debris enters the cavity. Ventless fryers that are enclosed better contain grease splatter, helping to protect employees against burns.
What is an open-pot design in a commercial ventless fryer?
Open-pot ventless fryers are free of tubes and burners, leaving the bottom fully open without spaces to hide debris, making the fryer easy to clean. Open-pot fryers are best suited for frying low-sediment foods, such as hash browns, french fries, and other frozen foods, as the cold zone in open-pot fryers is typically smaller than the cold zone in tube-style frypots. Open-pot ventless fryers are easy to clean and use less oil in the cold zone than traditional fryers.
How do fully automated fryer systems work?
Most ventless fryers come equipped with a fully automated system, meaning all a user has to do is load product into the fryer. Once in the fryer, the automated system takes over and begins cooking. Fried food is dispensed out of the front of the unit before the system automatically starts cooking the next batch of product. Although the system is automated, users can still control the settings with programmable presets.
What special features are available?
There are various special features available to enhance the operation of commercial ventless fryers. Programmable controls enable users to preprogram recipes, so they only need to push a button for the product they want to cook. Integral fire suppression systems prevent units from overheating and catching on fire, while HEPA-style air filtration technology rids the ventless fryer of odors. Filtration technology draws in air through the front grill, so air passes over the oil vat and is drawn through the grease filter. This process removes larger grease particles while leftover, grease-laden air moves through the HEPA-style air filter cartridge, where remaining grease particles are removed. Odors are then eliminated by activated carbon.
