2-Compartment Sink

A 2-compartment sink can be used to thaw frozen food, a process that's often performed with the food being placed in a bain marie or similar container, which warm water is allowed to flow over the item until it's thawed. This type of sink is often used for washing and sanitizing vegetables, or to complement a dishmachine for scrapping and soaking dishes. A two-compartment sink is often prohibited as a main dish washing sink without the approval from your local government. When they are approved for use, it is generally with a series of stipulations regulating how and when they can be used.
