The Valpro VP72S-HC sandwich and salad prep table includes 18 sixth-size pans to organize and store ingredients. When the table isn't in use, users can close the insulated lid to protect the ingredients from airborne contaminates. To secure it in place during use, it locks into an open position for convenience. On the front, its full-width cutting board can be removed for cleaning, reducing the risk of worktop damage when cutting sandwiches, veggies, or fruit. It measures 71⁷/₁₀ inches wide by 29⁹/₁₀ inches deep by 43¹/₅ inches high.

In its refrigerated cabinet, the Valpro VP72S-HC prep table features two wire shelves to store backup prep ingredients, enabling simple restocking. To retain an appropriate temperature, the walls are lined with polyurethane insulation in the walls, while its three doors self-close to reduce the risk of being left open, and their strong-seal door gaskets trap cold air inside. To keep temperatures consistent throughout the cabinet, two fans move air around the interior. Temperatures in the cabinet and around the pans can be set and adjusted with the front-facing electronic controls and LED display. To minimize frost buildup, this unit defrosts automatically. For durability, its exterior and interior are constructed of stainless steel.
