The Miyabi 1019935 Santoku knife features a 5 1⁄2-inch forged blade made of VG-10 super steel, layered in a 65-layer flower Damascus pattern and hardened using the CRYODUR® process for edge durability. Designed with a sheep’s foot point, the blade supports clean, guided slicing while minimizing the risk of piercing. Its overall length measures 9 24⁄25 inches, making it compact for detailed prep work. Part of the Kaizen series, this knife merges traditional Japanese design with high-performance materials. The D-shaped handle is constructed of black linen Micarta for a secure, balanced grip. A granton edge helps prevent food from sticking during repetitive cuts.
