Equipped with a 22-gallon, dual-tank configuration, the Arcobaleno APCG35D Aurora natural gas pasta cooker provides continuous water fill to offset boil-off. Measuring 31 1⁄2 inches wide by 36 1⁄4 inches deep by 36 inches high, its stainless steel structure stands on adjustable legs to maintain equal water depth across both tanks. A large skimmer captures starch before it reenters circulation, and a floor drain releases cooking water in a single discharge path. Activated with Piezoelectric ignition and variable controls, the cooker's individual burners fine-tune flame strength, while thermocouple safety valves monitor flame presence to inhibit unignited gas release.
