From boiling to deep frying, the Rational IVARIOPRO L 208/240V 3PH (LMX100CE) iVario® Pro L multifunctional cook center can perform a wide range of cooking methods. Its iVarioBoost heating technology uses ceramic heating elements and a fast-action base to generate heat from 85 to 480 degrees Fahrenheit. It can heat to 392 degrees Fahrenheit in just 3 minutes or reduce temperatures quickly when necessary. This quick-heating system compensates for temperature fluctuations when food or liquids are added, helping save energy and reduce cooking times. For streamlined operation, its iCookingSuite system uses intelligent sensors to detect load quantities, piece sizes, and food conditions to adjust heat as necessary. When operator management is required, the system will notify users. Operators can also set programs manually into the program management function.
To maximize cooking capabilities, this Rational IVARIOPRO L 208/240V 3PH (LMX100CE) multifunctional cook center's iZoneControl lets operators divide the pan base into as many as four individually controlled heating zones. As needs change, the zones' sizes, shapes, and positions can be modified. Its pressure cooking option raises the pan's internal pressure to 4.3 PSI— ideal for stews, stocks, and soups—and can reduce cooking times by 30 percent. For high-volume cooking, its 27-inch-wide by 22-inch-deep by 11-inch-tall pan accommodates 26 gallons and provides a 611-square-inch cooking surface area. Overall, this unit measures 41 inches wide by 35 inches deep by 24 inches high, is fitted with plastic feet, and includes a stand.
