By combining heat and humidity, the Henny Penny HHC900.37 holding cabinet ensures prepared foods are held at safe serving temperatures and original textures are preserved. Because of the use of humidity, food avoids drying out before serving, eliminating food waste over time. Operators can adjust temperatures from 160 to 210 degrees Fahrenheit with the SimpleHold touchpad—a control panel with an LED temperature set-point display. Its 1-gallon stainless steel water pan generates the humidity needed to prevent foods from drying out, and for constant circulation, dual fans and ventilated side racks enable hot air to disperse throughout the cabinet. To maintain temperatures in cool environments, its doors, side walls, and control module are insulated.
This Henny Penny HHC900.37 heated holding cabinet's shelf runners accommodate (15) 18-inch by 26-inch sheet pans on 3.75-inch centers. Users can access specific parts of the cabinet via the right-hinged stainless steel dual doors, and to simplify loading and removal, these self-closing doors stay open past 90 degrees. For simple transport from the kitchen to serving areas, this 24.75-inch-wide by 31.75-inch-deep by 71.25-inch-high unit is furnished with four 5-inch heavy-duty casters—two of which lock for stabilization. This unit's stainless steel construction resists rust, corrosion, and impact to retain its original look over time.
