Made of stainless steel along the interior and exterior front, sides, and covers, the Hoshizaki SR72B-30MD4 mega top prep table merges strength and efficiency for optimal performance. Its self-contained refrigeration system consistently holds temperatures between 32 and 52 degrees Fahrenheit throughout the unit's body. An enamel-coated evaporator within the system is designed to remove hot gas condensate and initiate timed defrosts to preserve its integrity. Capillary tubing extends throughout its structure to force hot air out with eco-friendly R290 hydrocarbon and an air distribution system ensures cool air stretches from the storage cavity to the poly pans above.

The Hoshizaki SR72B-30MD4 food prep table features an upper half designed to store 30 sixth-size poly pans full of fillings, meats, and toppings. Adapter bars hold these 4-inch-deep pans and create space between the cool liner and fresh ingredients. During less busy periods, the stainless steel covers can be lowered to maintain cool temperatures and keep external contaminants out. A 72-inch cutting board below this space helps maintain clean surfaces for line cooks making crispy shrimp po boys or refreshing spinach salads. This unit's ample space is further supplemented with additional storage beneath for easily accessible backstock, sauces, or bulky produce. Four stainless steel drawers are provided here that can fit 6-inch-deep poly pans, while one stainless steel door supplies additional room with an epoxy-coated shelf. With 18-cubic feet of interior capacity and an upper half holding many full pans, this unit comes with four 6-inch casters—two of which lock for stationary placement—to help with mobility.
