Designed for lasting strength, the Hoshizaki SR72B-18M prep table is constructed of stainless steel throughout its whole interior and exterior front, sides, and cover, with a refrigeration system located at its rear that is just as durable as the remainder of the unit. This system features an enamel-covered evaporator that facilitates hot gas removal to melt accumulating ice, while strong capillary tubing forces warm air out with R290 hydrocarbon refrigerant. Additionally, an air distribution center ensures that cool air meets all corners of the unit to maintain food-safe temperatures between 32 and 52 degrees Fahrenheit.

The Hoshizaki SR72B-18M food prep table has an upper and lower half crafted for different purposes. Adorned with a removable prep guard, the mega top holds 18 sixth-size poly pans for various toppings and fillings. These pans are suspended with included adapter bars and can be covered to prevent external contamination. A 72-inch cutting board spans the area below, providing a work station upon which to make tender Italian beef sandwiches or chilled pasta salads. Should ingredients on the cold bar run low, line cooks can reach under the cutting board and open one of three stainless steel doors to access backstock. These stay-open doors are field reversible, finished with an extruded aluminum handle, and automatically shut after use. Once opened, cooks can pull items from one of the epoxy-covered shelves, which are adjustable by half-inch increments for optimal, individualized layouts. Four 6-inch casters create smooth movement and two can be locked back for stationary placement.
