Hoshizaki PR46B Description

To provide ample space for prepping pizzas, the Hoshizaki PR46B prep table features a 46-inch-wide by 19-inch-deep by 1⁄2-inch-tall white polyethylene cutting board. Its top-mounted pan rail accommodates the six included third-size, 4-inch-deep polycarbonate pans and comes with adapter bars to keep pans of chopped vegetables, prepared sauce, and shredded cheese separated. For convenient ingredient access, the food pans are positioned 1 1⁄2 inches below the rail's front. When the rail isn't in use, its insulated, hinged stainless steel lid can cover the pans.

The single-section base is built with a solid door opening that features a stepped design to protect the door gasket. When fully open, the door creates a 25 1⁄2-inch-wide by 23-inch-tall opening and remains in place to ease ingredient insertion and retrieval. To reduce energy loss, the door self-closes when partially opened, and to accommodate specific kitchen layouts, its hinge is field reversible. Ingredients and other supplies can be stored on the base's two 28 3⁄4-inch-wide by 25 1⁄2-inch-deep epoxy-coated shelves. As inventory rotates, the anodized aluminum shelf supports can be raised or lowered in 1⁄2-inch increments. Overall, this 46-inch-wide by 36 1⁄4-inch-deep by 43 1⁄4-inch-tall back-of-house unit's front, sides, top, and interior are made of rust- and corrosion-resistant stainless steel capable of withstanding rigorous use and simplifying cleaning.

To ensure ingredients are stored at safe temperatures, the Hoshizaki PR46B cold prep table features a dual-controller refrigeration system that maintains set temperatures in the rail and cabinet. Its self-contained refrigeration system operates with R290 hydrocarbon refrigerant and features an epoxy-electrocoated evaporator coil that prolongs service life through high-volume use. Staff can set temperatures for each section with the solid-state digital controller, and temperature alarms alert staff if interior temperatures rise above or drop below the set range. To distribute air evenly around the food pans, the rail is built with an innovative ducted air distribution system. When the rail's lid is open, the set point automatically drops to keep food cool; when it's closed, the set point returns to normal to minimize the risk of freezing overnight or during idle periods. To ease maintenance, the removable air filter is front mounted, and the unit uses a heated, time-initiated defrost to eradicate icy buildup on the evaporator coil.
