Baxter PW2S-40.5"D Description
The Baxter PW2S-40.5D full-height insulated proofer cabinet is designed for proofing yeast products. The unit measures 99 1⁄2 inches tall and can harbor three single-end, four side-load, or two double racks. The cam-lock panels are made of durable stainless steel and are insulated with high-density foam to help maintain food safe temperatures. When this unit is loaded or unloaded, the nonmetallic interior bumpers reduce scratches, dents, and other damage that are possible with frequent use; users should note this unit ships knocked down and requires assembly.
The control panel of the Baxter PW2S-40.5D proofer cabinet is mounted at eye level and enables users to adjust temperature and humidity levels as needed. Temperatures can be set as high as 95 degrees, while humidity levels are manageable to 90 percent. Four separate timers can be set to track the duration of proof cycles, ensuring a high-quality result each time. An even blanket of heat is provided using electric heat and a patented airflow system.
