The 80-gallon capacity in the Groen AH/1E-80 stationary steam kettle is perfect for high-volume batch cooking, from soups and stews to pasta and rice. The unit uses steam to cook, which takes less effort and is more forgiving than cooking on a range. Steam is self-contained inside the water-filled hollow jacket, so it does not require a connection to a generator or boiler. The jacket covers the lower two-thirds of the kettle, providing a more uniform heat than range-top cooking. Operators can set the temperature at a level between 150 and 270 degrees Fahrenheit using the thermostat.

This kettle has a one-piece, 316 stainless steel liner, which is more corrosion resistant than 304 stainless steel, so it can be used with highly acidic food. The kettle body has an insulated design, sheathed in stainless steel for heat retention and preventing the exterior from getting hot to the touch. A counterbalanced cover—lockable in open and closed positions—is included with the Groen AH/1E-80 steam-jacketed kettle, holding heat to shorten cook times and reduce energy use. The integrated 2-inch draw-off valve enables users to remove stocks and broths from the kettle, while a strainer on the valve keeps out large debris to prevent clogging.

Control System
