To hold precooked meals at temperatures between 150 and 165 degrees Fahrenheit, the Cambro PCUHH2615 Pro Cart Ultra® hot food pan cabinet's hot modules use gentle, non-radiant heat that circulates from the front to the back of the compartment. Because this unit is divided into two sections, each compartment has a corresponding heat control to accommodate different foods' specific holding requirements. It can preheat in 45 minutes, and when the doors are opened for 30 seconds, it can recover lost heat in 3 minutes. When the unit cannot be plugged in, it retains generated heat for as long as 4 hours because it's insulated with CFC-free polyurethane. To ensure contents are held at safe temperatures, employees can monitor the solar digital displays built onto the doors.

The Cambro PCUHH2615 electric food pan carrier is equipped with 16 pairs of stainless steel universal rails that can hold 16 full-size sheet pans or 32 half-size sheet pans, 32 full-size food pans, (16) 15 7⁄10-inch by 23 3⁄5-inch trays, and (16) 16-inch by 16-inch by 2-inch pizza boxes. The rails can be raised or lowered in 1 1⁄2-inch increments to accommodate different products, and the two doors can be opened independently so users can access a specific section of the unit, minimizing temperature fluctuations. These doors can be opened 270 degrees to streamline pan loading and retrieval, and they're self-venting to reduce condensation buildup. Both doors have independent menu pockets to accommodate index cards or notes from a grease pencil that identify the unit's contents, reducing the need to open the doors to check inventory. As a tall unit, it measures 28 inches wide by 35 3⁄4 inches deep by 66 inches tall. It's positioned on four heavy-duty casters—two include brakes for stabilization. To minimize damage to the unit and walls during transport, the cabinet is built with a perimeter bumper. Its polyethylene structure resists chipping, denting, cracking, and rusting to withstand high-volume use and preserve its charcoal gray tint.
