The Dexter Russell S151PCP Sani-Safe® utility knife works well for thoroughly chopping fruits for canning. Its blade measures 3 1⁄2 inches long and is made of high-carbon steel that won't corrode and stain with high-volume use. To prevent slipping while cutting, its handle is textured and made of polypropylene—a durable thermoplastic. This knife comes with a white handle for color coding to prevent cross contamination.

Blade width and length make a perfectly designed knife
My favorite paring knife. Stays sharp with use of sharpening steel. Perfect blade length and width. I would like to see more handle options, like rosewood.
Paring Knife
I had the same knife for 30 years and loved the way it is so easy to cut vegetables. It finally started to wear out probably from cutting other things that I shouldn't have used it for. So happy to have found another one and at such a reasonable price.
