Dexter Russell S5289 Description
The Dexter S5289 08240 cleaver has a hole in the blade that can be used to hang from a butcher's belt or meat hook. Slicing through thick cuts of meat and cartilage is simple since the edge has been ground and honed. Staining is prevented thanks to the DEXSTEELâ„¢ high-carbon steel blade that is hardened for commercial use.
The handle of the knife is made of rosewood for a pleasing aesthetic, and it is slightly formed to make it comfortable for extended periods of use. Brass compression rivets attach the handle to the blade. These rivets shrink and swell with the wood, ensuring it maintains a tight fit. The Dexter S5289 08240 cleaver easily slices through thick cuts of meat and cartilage.

A Great Cleaver
The cleaver is heavy and sharp. The cleaver is still looking new and beautiful after chopped some chicken drumsticks to pieces. I would purchase it again if I need another one. Ka Tom has the best price. The waiting for the shipment was long.
Outstanding cleaver.
I use this cleaver for chopping off the legs and cracking joints on wild game. I have used the smaller 8" version for years. Thought I would try the larger version. The extra weight and length make this cleaver almost perfect for home butchery of wild game.

Not just for the professional butcher or chef!!!
This nine inch version of Dexter is my second purchase of this fabulous cleaver having also the first buy of the 8inch style. In over two years of daily use to chop meat and bones I have sharpened the 8" one time and that was because I was sharpening all my other cutlery not that I felt it had dulled. I cut up whole chickens, leg quarter and pork and neck bones for our German Shepherds who are fed a 100% raw diet of meat, bones, and two to three times a week fruit or vegetables added and raw whole eggs. I ordered the 9inch to cut up the thicker bones of turkeys easier for me with the slightly extra weight of the 9". The cleavers are beautiful and my two year old 8" looks like the day it arrived after over two years of twice daily use and after each usage I clean thoroughly with Clorox wipes even the handles. I recommend this Cadillac of products for any serious kitchen tasks of meat processing.

Very much a quality Cleaver. Unsure as to why the Dexter box was not included with it. Please remit to me the Dexter green box to me. This item is being given as a gift. As well are there blade covers? In case this item is jostled around, I really do not want it to cut through the box when the recipient shakes it to find out what it might be! Other than that the item is terrific, and I would recommend it to ALL!
Big, full tang, Heavy Duty
Much to my surprise, this cleaver is massive. The top of the knife has huge backbone, high quality stainless steel. If you need to get through bone, this is the tool. While not a fine chopper because the blade is so thick, it cuts through chicken, fish and other meats with ease. It required sharpening when received, but not much time on a diamond stone had me shaving paper in no time. This is a must have for the serious cook.

cleaver? This is a puma killer!
Looking for the huge built solid type cleaver they made back in the good ol' days? Well this will suit the bill nicely. This is not for delicate work. It is good steel and is balanced well - BUT it is 4 POUNDS! Are we clear? If you are chopping cow, horse, pig, bone or any other large animal, this baby is for you. Cut the head off a duck, no problem. Gross anatomy cuts on a cow? One shot. Done. Flatten garlic, yep, but so will a real sharp brick. frozen meat or bones like ribs not a problem. If you are chopping chickens, ducks or roosters, this will work, but is probably overkill. In fact, you probably want a Chinese knife/cleaver (looks like a cleaver but it's thinner)as it is lighter and will use less energy. If you are chopping fish, greens or vegetables, get another cleaver. They make a vegetable cleaver that is even thinner than a chinese style cleaver just for this purpose. I love this knife! and though I haven't had it long enough to see how it will retain an edge I can tell just from the quality of the steel that it will last several generations if maintained right. Again, this cleaver is 4 POUNDS ... you will get a work out wielding this thing for just a few chops, are we clear? good. CONS: the only bad thing I can say about this knife (except packiging which is a seperate section) out of the box is that some of the edges for the outline of the cleaver weren't deburred as much as I would like them to be. You would have to put a decent amount of pressure and friction to get it to break skin ...but still. A minor gripe fixed easily with a piece of sandpaper or emeryboard but just so that it was mentioned.
