Dexter Russell S5197 Description
The Dexter S5197 08030 Chinese chef knife looks similar to a cleaver, but it is designed to chop through soft skins of fruits, meats, and vegetables. The flat part of the blade easily presses garlic, lemons, and limes. The 2-inch-wide blade can be used to help scoop product from the cutting board into a pan. The blade is constructed of DEXSTEEL™, a high-carbon steel that resists staining. Walnut wood is used to make the natural-looking handle on the Dexter S5197 08030 Chinese chef knife.

Great knife
I had one of these knives for roughly 30 years. I lost it in a house fire and went looking for a replacement. I found a larger, thicker version from Katom, and could not find a closer match, so I ordered it. The knife came quickly and was as represented. But what I really wanted -- but could not find -- was this knife. I finally came across it on this website, and ordered it immediately. This is a great knife for general kitchen use. It does everything well, and it is my go-to for everyday use. The other knife will have its uses, and I am happy to have it. But this is the knife I love. I absolutely LOVE this knife!
I have severe heart failure and gout in all my joints including my hands and I only wish I knew about this chef knife years ago before I got sick. If you have arthritis in your hands this is the knife you want. Large handle makes for easy handling plus it's sharp due to thinness of blade. I love it. Period.

I got this as a gift over 25 years ago. It is our favorite vegetable chopper. It is used daily and still in perfect condition. My grown children love it and my daughter noticed the name on it so we googled it and could not believe we found it here. I just ordered 3 to give to each of my daughters for Christmas. This chopper will not disappoint!

Great knife to cut up veggies
I have had this knife several years now and love it for cutting up veggies. In fact, I just purchased one for my daughter who loves to cook. When she visits I noticed that she always grabs for this knife to cut up veggies and thought it would be a nice addition to her knives.
