The Beverage Air SPE72HC-30M-CL prep table is ideal for assembling sandwiches and salads from an assortment of fresh ingredients. A 10-inch-deep white polyethylene plastic cutting board spans the front of the unit, providing ample space for chopping and slicing fruits, vegetables, meats, and cheeses. When necessary, this board can be removed for cleaning. The top section holds as many as 30 sixth-size, 6-inch-deep polycarbonate plastic pans, which are included for convenience. Because the top cover is clear, users can gauge inventory without opening the top, conserving energy and shielding products from airborne particulates.

Each of the three sections in the base has a corresponding solid, self-closing door. When pushed past 120 degrees, these doors stay open for loading and retrieving products from the cabinet. To accommodate specific kitchen layouts, the doors' hinges can be reversed in the field. The interior is comprised of six epoxy-coated steel wire shelving to accommodate additional ingredients while providing lasting rust resistance. While the unit's interior is constructed of corrosion-resistant aluminum, the front, sides, top, doors, and grille are made of durable stainless steel to complement other back-of-house equipment. For simple repositioning, this 72-inch-wide by 38³⁄₈-inch-deep by 49-inch-tall prep table is mounted on 6-inch casters—two of these include brakes for stabilization during use.

The Beverage Air SPE72HC-30M-CL refrigerated cold food table's refrigeration system is self-contained to simplify installation. This system maintains temperatures from 36 to 38 degrees Fahrenheit in the top and base with energy-efficient, eco-friendly R290 refrigerant. To maximize efficiency, the evaporator coil is epoxy coated for corrosion resistance. Its adaptive defrost mechanism can remove icy buildup to preserve product quality.
