Because it's a direct-steam unit, the Cleveland KDL200 kettle requires connection to an external steam source that supplies steam pressure between 5 and 45 PSI, so it's ideal for kitchens with boilers or steam generators. This steam fills the kettle's two-thirds steam jacket, distributing uniform heat to cook product evenly. A spring-assisted cover built onto the kettle's top protects contents while they cook; the kettle's rolled rim is reinforced to withstand repeated opening and closing. To accommodate various recipe cooking requirements, users can adjust steam pressure using the steam control inlet valve.
Once product is cooked, it must be scooped from the Cleveland KDL200 steam kettle because this stationary system doesn't have a tilting mechanism. Its 2-inch tangent draw-off valve can be used to remove excess water or broth, and a strainer ensures solid food isn't expelled. Being supported on an open, tri-leg base, this floor model has adjustable, flanged feet for floor bolting, ensuring the unit stays in place throughout use. This 501⁄8-inch-wide by 465⁄8-inch-deep by 491⁄4-inch-high unit is made of rust- and corrosion-resistant stainless steel, which is simple to clean.
