The Turbo Air MST-72-N sandwich prep table accommodates 18 sixth-size, 4-inch-deep pans in the top compartment. With a forced-air system, cold air is circulated around the top, bottom, front, and rear to create a shield that maintains a safe temperature range. Even when the covers are open, this shield keeps temperatures stable, and when they are closed, their insulation retains cold air.
LED interior lights keep the cabinet illuminated to enhance the visibility of products. The cabinet in the Turbo Air MST-72-N salad prep table uses three polyethylene-coated, adjustable shelves to hold and organize products. Cold temperatures range between 33 and 39 degrees Fahrenheit, and a digital temperature readout shows the operator the temperature. The self-contained system has all the components built together, so it is easy to install and maintain. Its condenser uses a self-cleaning device to brush dust away daily, preventing a premature system malfunction.
