The Winston HOV5-14UV CVap® holding cabinet uses controlled vapor technology to manage air and vapor temperatures to maintain ideal food temperatures and textures prior to being served. This unit's C-Touch control uses calibration-free thermistors to modify evaporator and air temperatures in increments of 1 degree Fahrenheit to prevent foods from drying out. To ensure foods are being held at safe temperatures, operators can simply insert a USB into the unit and into their computers to download HACCP temperature and convection fan records. Food preparation prior to serving is also simplified with the eight programmable channels, which can be locked for accessibility. A low-water detection mechanism notifies users when water needs to be changed, minimizing maintenance pileups.

Designed with a full-size structure, the Winston HOV5-14UV commercial cabinet works best for high-volume operations. Each rack has a 65-pound capacity, and the cabinet holds 14 full-size sheet pans, 28 half-size sheet pans, and 28 full-size hotel pans. This unit's interior and exterior are made of sturdy stainless steel, which resists corrosion and defends against common wear, such as scrapes and dents, to maintain its original form over time. To minimize heat loss, two dutch doors open individually so users have direct access to specific food pans. They're insulated to reduce risk of user injury, and they're equipped with a magnetic door handle. Overall, this cabinet measures 27⁷/₁₀ inches wide by 34²³/₁₀₀ inches deep by 73¹/₅₀ inches high.
