The Doyon JAOP6 Jet-Air proofer oven has an oven compartment that holds six 18-inch by 26-inch sheet pans. Its digital thermostat enables cooking at temperatures as high as 500 degrees Fahrenheit. Common items can be prepared using the 99 programmable EBake settings; there is a manual cooking mode. The steam shot and pulse injection system adds either a small burst of steam or continuous steaming into the oven compartment. Heat is spread evenly with the reversing fan system.

This Doyon JAOP6 Jet-Air proofer oven accepts as many as (18) 18-inch by 26-inch pans in the proofer cavity. It has a temperature range from 90 to 110 degrees Fahrenheit and can reach a relative humidity as high as 95 percent. It has independent, manual controls for temperature and humidity. The water reservoir fills automatically to simplify operation. The entire unit is made of durable stainless steel that expedites cleaning and has a fully sealed, insulated body to contain heat. Its heat-reflective thermal glass doors and interior lighting clearly display the contents.
