While the electric fryer is manually operated, the natural gas fryer is digitally operated with programable settings allowing the operator to pre-set cooking temperatures for certain recipes. BKI's rotisserie ovens are electric and operated on a touchscreen panel that offers 15 programable setting modes, cool door technology, and a sensor that stops rotation when the doors are opened. The capacity of these rotisserie ovens is measured by the number of 3-pound chickens they can accommodate, with a single-deck unit cooking 40 at once and a double-deck unit cooking 80.
BKI food equipment also includes holding and display options. Heated display shelves keep food warm and accessible to customers, facilitating self-service workflows with an open back for employees and open front for customers. Countertop and freestanding fry warmer dump stations keep fried food warm and visible. Complete your frying process with a shortening disposal unit – designed to remove the oil from commercial pressure fryers – and a landing table, which has tray slides and casters to hold and transport fried food from the fryer to a heated display shelf. Ventless hood systems are compatible with most BKI cooking equipment for rotisserie chicken and provide two-stage filtration without the need to invest in ductwork.
