Lang Commercial Ovens: What You Need to Know
Lang convection ovens are available in one- or two-deck formats with full- or half-size widths. Two-deck ovens are full-size floor standing units that may include casters. Single-deck ovens may be full or half size, and they may be counter mounted or include legs for floor mounting.
ChefSeries ovens operate at temperatures as high as 525 degrees Fahrenheit, while Strato Series and half-size ovens can operate at 450 degrees Fahrenheit. The ChefSeries includes a Hydro-Assist feature that enables operators to add steam when cooking vegetables, lock in moisture in proteins such as ribs and brisket, or add a perfect finish to items such as bread.
ChefSeries ovens contain propeller and axial fans that auto reverse to heat pans evenly so they don't need to be rotated. Strato Series and half-size ovens include two-speed, pulsing fans that provide even heating without the need for rotation.
Strato Series ovens are deeper than half-size and ChefSeries ovens. ChefSeries compartments hold six racks vertically, while other units hold five racks.
Lang cheesemelters are special countertop ovens that can also be wall mounted. They quickly heat to 1,650 degrees Fahrenheit for melting cheese, toasting bread, finishing cooked dishes, or reheating precooked dishes. These Lang ovens have a removable backplate that supports pass-through operation but can also be wall mounted.

What types of controls are available on Lang ovens?
Lang cheesemelters include switches that either run the unit in automatic mode, which provides heat when a product is on the rack, or constant mode, which provides constant heat. Lang convection ovens in the Strato Series and half-size ovens come with several different control options:
- Accu-Plus controls consist of manual time and temperature control knobs with switches for fans and lights.
- Selectronic II controls, available on Strato Series gas units, consist of solid-state temperature control with a digital display. This package includes switches for fans, lights, and an automatic cook-and-hold function.
- Purple Plus controls on half-size electric units include adjustable controls using an LCD display, as well as 10 programmable one-touch product buttons.
- Platinum controls include solid-state, icon-driven controls that can be programmed to operate various functions and automate preset cooking combinations. Computer link programming is also available.
ChefSeries ovens have the following control packages as options, including:
- EnviroStar controls include manual knob temperature controls along with touchpad buttons for various other functions, including steam and cook and hold.
- EnviroZone controls are touch controls that use icons, with potential for 99 product programs.
Should I choose an electric or gas Lang oven?
Lang gas convection ovens, which use either propane or natural gas, are more affordable to operate than Lang electric convection ovens in most situations and will heat more quickly, but they may not hold even temperatures as well. A gas unit will still need access to electricity to operate fans and electronic controls.
What is the Service First program?
Middleby's Service First program, which covers Lang commercial ovens, is a warranty supplement that provides operators access to a network of service providers with essential parts for most fixes. As part of the program, the company promises a service agent will be on site within 6 hours when an equipment problem arises. Repairs are made on the first trip in most cases.
