Cambro dish carts are made of tough polyethylene that's designed to prevent dish breakage and extend the units' lifespans throughout heavy commercial use. Many models hold large volumes of multiple types of tableware, with some able to accommodate as much as 500 pounds at one time. Molded handles and swivel casters or Easy Wheels (which are 10 inches in diameter) enable smooth mobility. Many also come with vinyl covers to keep out contaminants.

With models featuring as many as 12 columns, Cambro plate dollies can accommodate both square and circular plates in a variety of stacking and sorting methods. With a Cambro adjustable dish caddy, employees can customize the width and number of columns to best suit the type and volume of tableware being loaded into the cart. In a poker chip-style dish caddy, columns are not adjustable and are designed to securely hold plates – some can hold as many as 60 plates at a time depending on the model.

Some establishments, such as food halls, hotels, or healthcare facilities, may prefer a Cambro dish cart with a compartment for trays. These carts are available with spaces for flatware, napkins, and condiments, such as salt and pepper packets, so they're great for delivering meals or creating a self-service station for guests in buffet lines.
