Not only are soda siphons and soda chargers stylish bar tools, they're also economical and practical. These portable devices enable bartenders to add carbonated water to a drink from anywhere at the bar rather than be tied to a specific dispenser or gun.
Carbonated water is an important behind-bar component. Not only do many cocktails require carbonation, many customers prefer seltzer-based drinks, such as sparkling water or club soda, in lieu of alcohol. The source of carbonated water matters: the expense and waste of bottles and cans adds up, and soda from a gun or dispenser can taste off or flat. Soda siphons and soda chargers can rectify this problem, eliminating the cost of bottled water and freeing up bartenders to add carbonation to drinks anywhere behind the bar.
A soda siphon – sometimes spelled soda syphon – is a canister filled with regular, cold water and dispenses carbonated water with the use of soda chargers. Soda chargers are stainless steel cartridges filled with food-grade carbon dioxide (CO2) that are inserted into the head of the soda siphon. After inserting, the user shakes the siphon, removes the soda charger from the head, and replaces it with the regular cap. The siphon is then ready to dispense fresh carbonated water with the squeeze of a trigger. Soda siphons hold their pressure so the carbonation is maintained, so they do not go flat like soda guns and dispensers.
The classic soda siphon consists of a liter- or quart-sized glass bottle surrounded by stainless steel mesh. This traditional look adds a stylish, vintage aesthetic to any bar. Soda chargers are made to work in tandem with specific siphon brands, so be sure to match the brand of soda charger to the siphon. Though soda chargers run out and must be replaced, purchasing replacement chargers periodically can save money in the long-run compared to the frequent cost of buying premade seltzer for your establishment.
