Polymer carts have the advantage of being quieter than metal carts. They also tend to be more affordable and, because they're made of relatively soft materials, safer to use in a busy restaurant where they run the risk of being bumped by customers coming and going.
Bus carts with tub slides are designed to accept standard 20 x 30 inch bins. Their simple, lightweight design might be preferred if it's only bus pans you need to transport.
