Flat-Bottom Fryers

Flat-bottom fryers allow doughy and battered items to float freely without getting stuck to the sides of the vat or tubes. However, flat fryers do not have cold zones, meaning their oil must be changed or filtered frequently. These fryers are commonly used in concession stands for items like doughnuts and funnel cakes, and can also be used in restaurants for battered chicken or fish, onions rings, and tempura.
