Matfer Bourgeat 340417 Description
The Matfer Bourgeat 340417 cannelé mold features an aluminum body lined with copper-tin to deliver even heat transfer and consistent caramelization. It measures 2 3⁄16 inches in diameter by 2 3⁄16 inches high to support uniform results throughout the batch. The round, fluted design forms traditional cannelés with deeply defined ridges, crisp outer shells, and custard-soft centers in every bake.
