FWE RH-18 Description

For reheating and finishing precooked foods, the FWE RH-18 rethermalization and holding cabinet's control panel features a dual-cycle mechanism with individual cook and holding cycles. Operators can adjust the cook cycle's temperature to 350 degrees Fahrenheit and the holding cycle to 200 degrees Fahrenheit. To avoid constant operational oversight, the controller switches automatically to the hold cycle once the cook cycle is complete. Its built-in heating system uses Incoloy-sheathed heating elements for quick heating and accurate temperature set points. The precision venting baffle duct system circulates heat throughout the cabinet uniformly, while door venting enables excess moisture to escape so products can brown naturally. Users can monitor interior cabinet temperatures with the LED display panel, and eight recipes can be programmed into the control panel to streamline operation.

This full-size FWE RH-18 rethermalization cabinet measures 29 1⁄4 inches wide by 38 3⁄4 inches deep by 76 1⁄2 inches high and is constructed of 18-gauge stainless steel—a resilient rust- and corrosion-resistant metal that's simple to wipe clean between uses. Its chrome-plated, epoxy-coated rod-style tray slides accommodate (18) 18-inch by 26-inch trays or baskets or (36) 12-inch by 20-inch by 2 1⁄2-inch-pans and can be adjusted in 1 1⁄2-inch increments as cooking and holding requirements evolve. To access certain cabinet sections directly and minimize heat loss during peak periods, two stainless steel Dutch doors encase the cabinet's front. This cabinet is mounted on four 5-inch casters—two swivel with brake and two rigid—for smooth maneuverability between the kitchen and serving area. To preserve heat during transport or in cool storage environments, its top, back, bottom, sides, and doors are insulated with high-density ceramic and fiberglass insulation.
