Traulsen TBC13-31 Description

The Traulsen TBC13-31 Spec-Line reach-in blast chiller is a floor-model refrigerated unit designed for large-batch chilling operations in commercial kitchen production environments. Its EPICON touch screen control incorporates automatic and manual operating modes with adjustable target temperatures and cycle times to support varied cooling procedures, while four chilling settings include blast chill, speed, energy-saving, and delicate modes. Three removable food probes monitor internal product temperatures during multi-batch operation, and the USB port, onboard cycle data printer, and 90-day cycle memory support production tracking and stored cycle documentation. The 13-level cabinet accommodates 13 full-size pans or (26) 12-inch by 20-inch by 2-inch pans, and the unit chills 200 pounds of product from 160 to 40 degrees Fahrenheit in 140 minutes.

Built of stainless steel inside and out, the Traulsen TBC13-31 blast chiller incorporates a left-hinged, solid door with self-closing cam-lift hinges and a stay-open feature at 120 degrees. Its dual self-contained refrigeration system uses non-flammable R448A refrigerant and incorporates thermostatic expansion valve technology, high-humidity evaporator coils, and hot gas defrost to support rapid temperature pull-down during demanding production schedules. Front-facing condenser coils simplify cleaning and service access, while the blast chiller automatically transitions into maintenance mode after cycle completion to hold products at target temperature. The cabinet is mounted on 6-inch adjustable legs for stationary installation in commercial prep areas.
