The Centerline by Traulsen CLBC7-R reach-in blast chiller is a 34³⁄₄-inch-wide by 38¹³⁄₁₀₀-inch-deep by 61¹⁴⁄₂₅-inch-high floor model positioned on 4-inch casters. For lasting resiliency and rust and corrosion resistance, its front, sides, door, and interior are heavy-gauge stainless steel, while its exterior cabinet top, back, and bottom are heavy-gauge galvanized steel. Inside the unit, the seven epoxy-coated shelves accommodate seven 18-inch by 26-inch pans or (14) 12-inch by 20-inch pans. To ease pan insertion and removal, its solid door remains open past 120 degrees, and though it comes right hinged, this can be reversed in the field if desired. Anti-condensate heaters positioned behind the door opening reduce the moisture that accumulates when hot foods are stored in a cool environment.

The Centerline by Traulsen CLBC7-R reach-in blast chiller's high-capacity, self-contained refrigeration system uses a non-flammable, environmentally friendly R-448A refrigerant and an advanced air circulation system for rapid chilling of hot food. In 120 minutes, this unit can chill 84 pounds of 160-degree-Fahrenheit to 40 degrees Fahrenheit, quickly moving precooked product through the danger zone. As menus change, operators can use the 2⁴⁄₅-inch digital control to choose between hard- or soft-chill modes, adjust cycle time, and monitor temperature using the food probe. This high-capacity refrigeration system maintains set temperatures between 32 and 40 degrees Fahrenheit, and 2-inch-thick polyurethane insulation is foamed in place in the cabinet and door. For simplified maintenance, this unit features an accessible condenser coil and automatic defrost system.
