The contoured tagayasan wood handle on the Shun SWT0727 Kanso santoku knife is shaped for grip security and comfort during prep tasks. Part of the Kanso series, this compact knife features a sheep’s foot tip that supports precision and control when working close to the cutting surface. The 51⁄2-inch blade is forged of high-carbon AUS10A stainless steel, known for its strength, edge retention, and resistance to wear. A hollow-ground (Granton) edge helps reduce drag and encourages food release. The slightly curved blade design supports slicing, chopping, and forward-push cutting techniques.
