This stone deck absorbs moisture from dough while transferring heat evenly, resulting in crispy pizza crusts. Heated by natural gas, its two free-floating duplex-tube burners circulate heat uniformly throughout the compartment; operators can modify their temperatures from 300 to 650 degrees Fahrenheit to achieve various results. When the oven is stored in cool ambient environments or its door is opened for short periods of time, the interior's fiber insulation preserves programmed temperatures to reduce the risk of unexpected temperature changes.
