Wood Stone Stone Hearth Oven - Cast-Ceramic/Steel (MTADAMS5)

For lasting durability in busy back-of-house settings, a tensioned steel exoskeleton encases the perimeter of the Wood Stone MTADAMS5 (WS-MS-5) Mt. Adams oven's hearth and dome. Its 4-inch-thick cast-ceramic hearth and 4-inch-thick dome are wrapped in spun ceramic fiber insulation to preserve generated heat. The oven's exterior is made of resilient, corrosion-resistant galvanized steel, and the dome and hearth are positioned on an open, black steel stand. To ease installation, this 64 1⁄4-inch-wide by 72 1⁄2-inch-deep by 78 3⁄4-inch-high unit ships assembled and can be directly connected to a power-ventilated, grease-rated chimney or ventilation hood.

Great for medium- and high-volume establishments, the Wood Stone MTADAMS5 (WS-MS-5) stone hearth oven features a 52-inch-diameter oven floor that accommodates as many as (16) 8-inch pizzas, (12) 10-inch pizzas, eight 12-inch pizzas, or five 16-inch pizzas. To ease pizza insertion and retrieval, its door opening measures 29 3⁄4 inches wide by 10 inches high. As baking requirements change, operators can adjust the radiant flame located in the cooking chamber's rear. Staff can also thermostatically control the additional burner positioned beneath the oven deck to balance the top heat. This burner withstands high-volume use and quickly recovers heat to minimize lag time.
