Though all tongs serve the same basic function – picking up food and objects without touching them with your hands – the wide selection of serving tongs used in the foodservice industry includes several styles meant for specific tasks. Serving tongs are used to place food directly onto plates, ice tongs transfer ice into glasses, pom tongs are often used in salad bars, and so on. Designs for these utensils can range from triangle-shaped paddles on serving tongs to the scalloped tips of ice tongs.
Depending on the type, tongs typically measure between 4 and 12 inches long, and though they're generally made of stainless steel, wood and plastic options are also available. Tongs can be strictly utilitarian in design for back-of-house applications or more ornate and attractive for operators using them in customer-facing applications, such as a self-serve buffet.
