The Traulsen CLPT-2708-DW compact sandwich prep table has a 12-inch-deep by 3⁄4-inch-thick cutting board that spans the full length of its top section. Its polyethylene cutting board can be used to chop vegetables, fruits, meats, and breads and can be removed for cleaning, preventing cross contamination. Behind the cutting board, a cut-out section includes eight sixth-size pans with 4-inch depths to organize prepared ingredients; a roll-top lid can be closed over the pans to protect them from contaminants. Two drawers built beneath the top section are removable for cleaning and can hold 6-inch-deep, full-size food pans, which are sold separately.

To maintain operating temperatures between 32 and 41 degrees Fahrenheit, this Traulsen CLPT-2708-DW sandwich prep table has a rear-mounted, self-contained refrigeration system that uses R290 hydrocarbon refrigerant. The cabinet is insulated with high-density, foamed-in-place polyurethane to minimize temperature changes when the drawers are opened. Users can monitor and adjust temperatures on the three-digit LED display, which has a temperature readout. With its durable stainless steel construction and anodized aluminum interior, it's designed to withstand heavy-duty use. Its 27 7⁄8-inch-wide by 32 3⁄4-inch-deep by 44-inch-high structure is furnished with casters for smooth maneuvering.
